Best Ever Poppy Seed Roll Cake

Ingredients:
• 5 rolls (croissants)
• 5 eggs
• 5 dl / 18.17 oz of milk
• 2,5 dl / 9 oz of heavy cream 
• 5 Tbsp of sugar
• 1 Tbsp of vanilla sugar
• grated peel of 1 lemon
• 300gr / 0.6lb of poppy seeds 
• 300gr / 0.6lb of sugar for combining with poppy seeds
• margarine for greasing the casserole dish

• If you are using fresh poppy seeds, grind them and add equal amount of sugar.
- Separate the eggyolks from eggwhites.
- Beet the eggyolks with sugar, until creamy and fluffy.
- Add heavy cream, milk and lemon peels.
- In a separate bowl beat the egg whites untill soft peaks form and add to the mixture.

- Slice the pastry rolls in 1cm/0.4in wide circles.
- Soak the slices in the cream.

- Grease one casserole dish with margarine.
- Put one layer of rolls circles to the bottom of the casserole dish.
- Sprinkle half amount of poppy seeds on top. 
        - Add another layer of rolls and sprinkle on top the rest of the poppy seeds.
- Pour the remaining cream on top.


-Bake until golden in preheatet oven on 180C/392F around 20 minutes.
