No doubt, this is one very yummy dish! I made it numerous times. It's amaizing how such a simple dish can be so good!
Ingredients:
500 gr of red
lentils
300 gr of chicken
breast
1 smaller onion
3-5 tbsp of oil
1-2 tsp of curry
powder
Salt
Direction:
Chop finely the
onions to small dices.
Cut
the meat into small cubes. (approximately 1cm)
Heat
the oil and add diced
onions.
Cook on medium heat until glasses.
Add curry
powder and keep stirring for a minute so it won't stick to the bottom.
Add
cubed chicken breasts and cook around 5 minutes, until it changes color. Stir constantly,
otherwise it will stick. If it starts sticking anyways, add a little bit of
water.
Add prewashed red
lentils. Mix everything and cover with water. Once the water warms, add salt to
taste.
Cook
for around 30 - 40 minutes
on medium heat. Lentils
will soak the water by time, so you should add more water to it. If you want a
thicker meal, add less water.
There
is no need to additional thickening, it will come to right consistensy once the
water evaporates.
Enjoy your healthy & delicous lunch!
